Open-Faced Sandwiches with Ricotta, Arugula, and Fried Egg

I’ve made these sandwiches before and they are so delicious! If you want to make something incredibly fast for dinner this week, here’s your winner. I can never find arugula at my grocery store, but I always buy this “herb mixture” or “spring greens” which is basically a fancy salad mix with dandelions and other stuff in it and it works really well for this. I imagine you could also use fresh spinach and it would be delicious as well. And don’t worry if you suck at making fried eggs like I do. The technique they give you to cook them is very easy and there’s no flipping required!
