I’m not really sure what to say about this soup other than it was simple to make and delicious. You’d think cauliflower soup would be bland, but the roasting part gave it a lot of flavor. I blended my soup up a couple different times because I wanted a smoother texture. First I chopped up the cauliflower in my food processor before adding it to the broth, then blended it all up with an immersion blender after all the ingredients were added (except the cheese). The recipe didn’t make much, just two large bowls, so if this is your main meal and you’re cooking for your family, you’ll probably want to at least double the recipe.
