Chicken Enchiladas

Yes I have posted this recipe before, but it’s so delicious, I thought I’d give you a reminder. I highly recommend using rotisserie chicken for these as it gives them so much extra flavor. This is a great recipe for a busy weeknight and it’s easy to make it extra fancy by adding some Mexican Rice-a-Roni on the side. HA!
