Chicken Pot Pie Bundles

This was a Pinterest find for me… they look so cute don’t they? Well, I’m not sure what to think about the taste of these babies. The filling was good (make sure you add enough salt & pepper!) but the baked egg roll wrappers turned out a bit tough. If I were to make these again, I think I’d try steaming them after baking like you would a potsticker. This would soften up the outside and give it a much better texture. If you want to try steaming them, just place the finished (baked) pouches in a heated deep saute pan, add just enough water to make a very thin layer on the bottom of the pan, and cover with a lid. Allow to steam for oh, 2 minutes or so until the wrappers get a little translucent looking. Done!
