Are you looking for a more picnic friendly version of Key Lime Pie? Give these babies a shot! They have the same great taste as Key Lime Pie, but don’t require forks or plates to eat! And to add a bit of a twist, the crust isn’t graham crackers… it’s animal crackers! Yum! I like to use the Barnum brand animal crackers as they have more of a ginger-snap sort of spiciness to them, but if you can’t find those, graham crackers would work fine too. Or straight ginger snaps perhaps? There is also a tweak to these bars that I’ve never tried before, but sounds delicious as well: Triple Citrus Bars! Look to the bottom of the recipe it you’d like to make that version instead.
